Butterscotch Oatmeal Cookies

 

I’ve always been a fan of butterscotch, and cookies. I was on Pinterest the other day, and I found this recipe. Obviously I had to try it out, and now I’m probably about 10 pounds heavier. Okay, maybe not quite that much, but I did eat more than I should have in such a short amount of time…

Moving on, here’s the recipe:

Ingredients:

2 cups all-purpose flour

1⁄2 tsp baking powder

1 tsp baking soda

1⁄2 tsp salt

1⁄2 cup margarine

1⁄2 cup vegetable oil

1 cup packed brown sugar

1 cup white sugar

2 eggs

2 cups quick cooking oats

1 cup butterscotch chips

 

Directions:

  1. Preheat oven to 350 degrees. While the oven preheats, sift flour, baking powder, baking soda, and salt together and set aside. Sifting these ingredients will make for a softer, less dense cookie.
  2. In a separate bowl, cream margarine, oil, brown sugar, and white sugar together. Add eggs one at a time and beat well. Gradually add in flour mixture, mixing just enough to combine ingredients. Stir in oats and butterscotch chips.
  3. Drop spoonfuls of dough onto ungreased cookie sheet(s) and then bake for 10 to 12 minutes, or until edges are golden. Do not overcook, or they will become hard.

These cookies with a glass of milk are quite the treat, especially when the cookie is still warm from the oven. I will definitely be saving this recipe and referring back to it when I need to get my butterscotch fix. Feel free to share your favorite butterscotch recipe in the comments section!
